Basic Crepe Recipe!

Ingredients:

2 eggs
1 cup milk
3/4 cup flour
pinch of salt


Instructions:

1. Mix the ingredients in a large bowl with a wire whisk.
2. Let the batter stand in the refrigerator for one hour.
3. Grease a small nonstick fry pan with butter.
4. Heat the pan and then add about 3 Tbsp. of batter. Spread it thinly and cook on both sides. It shouldn’t take longer than 30 seconds per crepe.
5. Stack them up on a plate and they are ready to be filled.


This recipe makes approximately 12 crepes.

Basque Chicken - A Quick Easy Chicken Recipe

  • 2 red peppers, sliced in strips
  • 2 green peppers, sliced in strips
  • 3 onions, chopped & 2 tomatoes (diced)
  • 4 tablespoons olive oil
  • 3 cloves garlic, crushed or minced
  • 1 chicken cut into 6 pieces (remove the skin if you wish)
  • salt and pepper
  • 1/2 cup white wine
  • mixed dried herbs
  • pinch of cayenne pepper
Preparation Time: 1 hour

Directions:

In a large frying pan, heat two tablespoons olive oil on medium heat and cook the onions and bell pepper for five minutes. Add the garlic and cook one minute. Add the tomatoes, cover and simmer on low to medium heat for 20 minutes. Add salt and pepper to taste.

Meanwhile, in another frying pan, brown the chicken on all sides in two tablespoons olive oil on medium heat.

Add the chicken to the tomato sauce along with the wine, several teaspoons of mixed dried herbs, and the pinch of cayenne pepper. Cover and simmer on low to medium heat for 30 minutes or until chicken is cooked.

Quiche aux Courgettes (Vegetarian Quiche)

Ingredients:
-1 unsweetened pie crust (you can either make your own or use a ready made)
-100g of butter
-1 large onion, chopped
-2 medium sized zucchinis
-30g of cheese
-salt and pepper
-3 eggs
-1 cup crème fraîche (full cream)
-1/4 teaspoon nutmeg


TIPS for the pie crust!!!

It is always helpful to freeze a pie or tart crust before blind baking it like in this recipe. This helps to keep the crust from slipping down the edges of the pan and making unsightly bubbles or splits. Just fit the crust to the tart pan, prick it with a fork in several places, then place in freezer for 15 minutes to half an hour before baking.

Directions:

Fit the pie crust to a tart pan, using a rolling pin to cut off the top edges. Place in freezer for 15 minutes or longer, then bake at 180°C for 10 minutes. Remove from oven and let cool before filling.

Meanwhile, melt the butter in a pan and add onions cooking about 5 minutes. Add zucchini and cook 10 minutes longer. Salt and pepper to taste. Remove from heat and spread evenly into bottom of cooled pie crust.

Sprinkle evenly with cheese. Beat the eggs with the crème fraîche, nutmeg and salt and pepper. Pour on top of vegetables and cheese and bake for 30 minutes at 200°C.

French Cheese Puffs

French Cheese Puffs:

Ingredients:
-1 cup water
- one bar of butter
-1 teaspoon salt
-pinch of nutmeg
-1 cup all purpose flour
- 3 eggs
-1/2 cup grated Parmesan cheese (2 ounces)

Prep time: 30 min - Cook time: 20 min



Directions:
  1. Preheat the oven to 425°F (210°C).
  2. Place the water, cut up butter, salt, pepper and nutmeg in a medium sized saucepan and place on low heat. As soon as the water boils and the butter has all melted, remove from heat.
  3. Immediately stir in all of the flour using a wooden spoon. Stir for at least 2 minutes making sure everything gets well blended. The dough will form a single mass and the heat of the pan will dry it out somewhat.
  4. Add one egg and beat the dough for about 1 minute to completely incorporate the egg. The result will be a very sticky dough. Repeat with the other three eggs, making sure you blend in one egg completely before moving to the next.
  5. Add the cheese and Stir to blend completely.
  6. You can either use a pastry tube or two spoons (one to scoop and one to scrape) to form the balls. Use about a tablespoon of dough for each puff. Pipe or scrape the balls onto a baking tray lined with parchment paper, spacing them about an inch apart.
  7. Brush the tops of the balls with a pastry brush dipped in the beaten egg. Sprinkle the tops with the remaining Parmesan cheese.
  8. Bake at 425°F (210°C) for 20 minutes. Remove from oven and serve warm.

Cheese Puff Recipe Variations

My favorite combination is the above recipe, plus 1 cup diced ham, 1/4 cup chopped chives, and a good pinch of pepper.

  • You can also try adding 1 cup crumbled blue cheese; or add a couple handfuls of chopped walnuts as well.
  • You can try adding 1 cup finely diced ham. This would work with crumbled sausage or finely diced chorizo as well.
